The Enso HD Petty Knife is ideal for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Enso handcrafts professional knives combining the best of advanced technology with the unsurpassed knowledge and expertise of traditional craftsmen. The Blade Enso HD blades are constructed of 37-layer stainless steel Damascus with a VG-10 steel cutting core for excellent edge retention. Every blade is heat treated to a 61 on the Rockwell scale and are hand ground to approximately 12° cutting angle with a hammered or sashimi finish. The Handle All Enso HD knives feature a black canvas micarta handle with three stainless steel rivets, bolster and end cap. The enclosed full tang handle construction is seamless and ensures strength, durability and balance. The Edge Features a double bevel (50/50) edge for right or left-handed use, with a machine-pressed blade kanji. The first two Japanese characters of the kanji are Enso which means Harmony in Japanese. The last three characters are Nippon Sei, which means Made In Japan. I think that Enso knives are the best you can get for your money. I know that some chefs can spend hundreds of dollars on one knife, but for Home kitchens I think these represent the best value for your money! My kitchen knife collection features these Enso knives and some Cangshan Naka knives. Both are fantastic knives, but I would rate these Enso knives just a bit higher. I love the hammered finish and the folded steel. Really super sharp, like ridiculously sharp! Also made in Seki Japan! I'm not professional chef so I'm not really sure where balance is supposed to be on kitchen knives, I can only say that they feel good to hold and great to cut with. The best kitchen knives that I've ever owned with the Naka knives second. Can't speak to rust resistance because I've only owned them a month or so and wash by hand, drying immediately after and placing on spinning magnetic block. If you're looking for an impressive and sharp set of knives for your kitchen and feel Japanese knives are the best, but don't want to spend a ridiculous amount, give these Enso knives a try. I love them!
