I used to take knives to my Dad's house to be sharpened on one of the Chef's Choice units. It might have been this same one in white. Anyway after SUBTLY suggesting for some time, I finally got my own for Christmas. I've had it now for almost three years so perhaps my procrastination about writing this review will pay off for those of you who like to know if something is still good after a while. I thank the giver every time I use it and it's right there on the kitchen counter by a knife block and the knife drawer always ready. If a blade won't slip right through a tomato skin I run it through this sharpener briefly and it slices so nice, or not so 'nice' if you get a finger in the way. I've cut through a finger nail. That's how sharp you can get blades. Still, it is true that a dull blade is more dangerous. One reason is that dull knives will require more force which can lead to accidents, and at the very least, frustration and perhaps messy food. I rarely use serrated blades, but this will hone their edges, too. I don't own any of the heavy iron/carbon steel (? whatever they are) knives, but I think this unit would take care of them just fine also. It does an excellent job on stainless steel blades. The motor is strong, never lagging. The clear instructions tell you which wheel (or two) to use on which blades. The guides make getting the proper angle foolproof. (I can't speak about some of the specialty knives with there unique angles.) I know I would never get an edge, like Chef's Choice can, by hand using any equipment meant for that procedure and I won't ever try it again when in seconds I can have it done with this machine. It's easy to use and I truly feel joy every time I turn it on right there where I usually prep food. Does 'joy' sound a bit corny? If you really like to cook, I bet you know what I mean. I'll never be without one again even if I have to buy my own. That prospect, however, is unlikely since this sharpener seems like it's going to hold up for ever.November 2023Just want to say that this knife sharpener is still sitting on my kitchen counter ready to go anytime.
