The Enso SG2 Chef's Knife is designed for slicing, dicing, and chopping a full range of fruits, vegetables, and more. With its curved belly, the Chef's knife can be gently rocked through fresh herbs or spices to produce a very fine mince. Enso SG2 features an extremely sharp cutting edge. Constructed of Japanese SG2 Micro Carbide powder stainless steel, which is enveloped by 101 layers combined with alternating soft and hard stainless steel. The corrosion resistant powdered carbon steel has an unprecedented 63 Rockwell hardness. Powdered steel is used because it ensures a high degree of purity and strength. The resulting blade is extremely hard, ensuring an exceptionally sharp cutting edge. The surface impresses a fascinating Damascus design pattern. The handle is made of black canvas micarta with a stainless steel bolster, red spacers and Samurai Crest. The engraved end-cap of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance. Enso SG2 - Exceptionally Sharp The Blade Enso SG2 blades are constructed of 101-layer stainless steel Damascus with SG2 Micro Carbide powder steel cutting core. The knives are heat treated to a 63 on the Rockwell scale. Each Enso SG2 knife features hand-engraved Japanese kanji that is etched by a Japanese artisan. The Handle All Enso SG2 knives feature a black canvas micarta handle with a stainless steel bolster, red spacers and Samurai Crest. The enclosed full tang handle construction is seamless and ensures strength, durability and balance. The engraved end piece of the handle is made of 18/10 stainless steel. The Edge The incredibly sharp Enso SG2 blades are hand ground to an approximate 12° cutting angle and features a double bevel edge for right or left-handed users. The Japanese kanji is hand engraved on the blade. Hand-Engraved Japanese Blade Kanji Each Enso SG2 knife features blade kanji that is hand-engraved by a Japanese artisan. The first two Japanese characters of the kanji are Enso which means Harmony in Japanese. The last four characters are Hyaku Ichi Sō-kō, which means 101 Layer Steel. The Japanese character on the end piece of the handle is Minori which means Harvest in Japanese. I received this beautiful Japanese made knife with prompt delivery. It is gorgeous and like a piece of art. I am in the midst of converting all my old well used American knives I've had for 20+ years over to Japanese Damascus made knives which are SG2 or VG-10 hand forged steel. I extensively research everything I purchase and review customer reviews before I make a purchase. I am very happy with this purchase. Another Japanese knife I purchased, a Sujihiki 270mm from another vender uses Shiragami #2 White Japanese steel which carries an even sharper blade but requires more frequent sharpening. As with all Japanese forged knives, they require Wetstones to keep them sharp.
