Giesser’s 8 inch breaking is a high quality knife used to “break” or cut up primal cuts of beef or pork. Breaking usually refers to separation at the joints of a primal cut but can also be used to separate various cuts from the larger section. The Granton feature or ground in flutes on the sides of the blade allow the cut to be made on soft or tender cuts without the product wanting to follow the blade into the cut. This greatly improves the quality and accuracy of the cut.
