I put this on a 10" chef's knife, carbon steel, Chicago cutlery. Not a super expensive knife. Old and beat up from my church kitchen. I took the knife home and cleaned it up a bit. This used to be the standard steel for good, hard working kitchen knives. Lately Health Departments doing kitchen inspections think the normal grey/black patina that this steel develops is a sign of 'dirty' (it ain't) and many inspectors insist on stainless steel knives that look good but are a total pain to keep sharp. I polished the knife with a wire brush and a buffing wheel until it looked like new and then sharpened it with an Arkansas stone, 2000 grit wet dry sand paper and then an old fashioned straight razor leather strop. That is the beauty of this steel--it really takes a sharp edge without a lot of work. I stroked it for less than 3 minutes each time and it is now hair-popping sharp.That edge would not last long, in a drawer at church. But many of our church workers are not used to a really sharp knife and would cut them selves with this now. This large edge protector will do the job. It covers all the edge, almost the entire knife blade and the 'point' end is closed. I wrote SHARP in big letters on both sides of the protector. It seems to be pretty firmly attached. Does the 'clamp' side of the protector scratch the blade? I have not had this long enough to know, but why is that a big deal? Even if the knife was really expensive, it is still a tool, not jewelry. It is supposed to show signs of use.There are not many options for knife sheath design, but this is a good one. I bought it to cover my ultra-lethal new bread knife. The sheath is easy to use, thick and stable, u and even looks nice in medium blue. It hugs the knife blade snugly so I don't have to worry that I will amputate my fingers every time I reach for the potato masher or the spatula.I have a long serrated bread knife that lives in a drawer (I don't have enough empty counter space for a knife block), and it was a bit menacing. This protector (the Large size) is big enough to keep the blade covered and so I get to keep all of my fingers intact. It's pretty tight so it will hold itself on the knife blade, but is not so tight that it's too hard to get the blade in.Bottom Line: I most certainly would buy this KitchenIQ/Edgeware 50273 Small Knife Edge Protector again, recommend it to friends, recommend it to family, and buy it as a gift for someone I care about. The body of the edge protector is made of thick, sturdy, inflexible plastic. It is is very effective and holds the knife very securely without allowing the knife move by itself. There is absolutely no way the knife will come out of this edge guard without being intentionally removed. Placing the knife into and removing the knife from this edge protector is simple, making this edge guard very easy and safe to use.The KitchenIQ/Edgeware 50273 Small Knife Edge Protector is a perfect fit for the I have a lot of knives - different lines of Shuns, Kramers, Wüsthofs, Miyabis, Tojiros and others. They won't all fit in blocks. I own 9 of these. If you're going to put your knives in a drawer, these are the best guards. I have a Messermister guard but it slides off every blade I own. I also had a bunch of the KAI magnetic blade guards that fold open and closed but I got rid of them because the magnets separate from the outside rubber after a year or so. I replaced them all with these. They don't slip off the blades and they're sturdy. When I travel and know I'm going to cook, I take a knife or two with me. I've put them in soft canvas bags and checked them and they've survived flights from Arkansas to California and Alaska and back. I have large ones and smaller ones. If you have nice knives, you should protect the blades, and you can't beat these for the price.I bought this to cover the very, very sharp edge of a Victorinox bread knife (that I have cut myself with badly two times trying to get it back into another edge protector I had). This product by Edgeware is just the ticket. It feels durable and not flimsy, and it fits the 10 1/4" blade nicely. I was initially concerned because the protector seemed to be a little wide, but it holds the knife securely so it is not an issue. It slides in and comes out of the protector with a nice snug feel and holds it firmly in place until I need it. I am going to order more of these in other sizes for my Victorinox boning knife and butcher knife. This will last for a very, very long time and it is worth every penny.not very easy to useThis knife protector is thick and sturdy and does a great job protecting my knife. I have had other knife sleeves in the past and they are either too snug or too big and this one seems to fit just right. I also like that it doesn't come off the knife unless you take it off. You can't beat the price either. I will be getting more of these for all my other good knives in the future.
