This knife has good balance, good edge retention and enough heft to cut a box of sweet potatoes. I took a chance on it for the price and have been very happy with it. It is my workhorse knife now.The knife itself is very sharp. It was even delivered already sharpened, however since it was inside a very well padded box and had blade covers on it, I didn't have to worry about possibly cutting myself when it was delivered. However, what I did find out about this knife is that it cuts through some of the toughest meat like melted butter. With cheese it was a little more difficult because there were no divots. However, I'm also able to cut through all sorts of fruits and vegetables without feeling as though I was sawing through them. The handle has a really nice and strong grip to it. Even though it is kind of smooth, I have not once found that it slipped through my hand while cutting anything. Great blade and really easy to clean and store away.This knife can handle any tasks you giving to it except cutting bones. I'm very satisfied with this because it's very satisfy to see it cuts through the meat, and veggies with very clean cut. That feeling makes me want to stay in the kitchen and cook all day. It is lightweight but extremely sharp so handle it with care. If you have finger protector, wear it. It has the right curve and angle to cut through the stuff which was built properly. Yes, these 2 factors play very crucial role when building a knife and they've mastered it. Awesome knife for this price range!This knife was packaged very well. Yeah, I’m a bit of a cooking geek and I love me a fine Santoku more than any other knife! The presentation got me evermore excited…it felt like a little gift to myself to open this attractive box and see my beautiful new knife so lovingly packed inside of it. Like all good Santoku knives, this one by AMSZL is made of 67 layers of Japanese high carbon stainless steel which is pretty much the best steel you can get. This one is just sooooo gorgeous with its hammered Damascus pattern and granton edge on the blade and the curvy ergonomic handle with the rivets. The handle is full tang with a really nice cap and has such a beautiful, glossy finish. I couldn’t wait to try it!This Santoku knife has a nice hard, sharp blade which is fantastic for fine cutting and making sushi. It’s also perfect for slicing through tomatoes and other soft fruit because it is so sharp that it is able to slice them precisely without bruising them. There are no rough edges whatsoever on this blade…my finger was able to glide down the top side of the blade without feeling any burrs. There’s also no bolster, so you can sharpen it way back to the heel of the knife. The handle feels good in the hand, it’s comfortable to use, which is important if you are making a big meal and will be cutting a lot of stuff. I was able to make see-thru tomato slices with this knife easily…I dunno what you’d use see-thru tomato slices for, but I thought it was pretty cool that this knife is able to accomplish that. As for the granton edge, I love the look of them, but I’m not really sure they do much…at least, they don’t seem to do much, in my experience. I have to say, although the look of this knife gives the impression that it’s heavy, it really isn’t…the steel may be super-hard, but it’s also quite thin and that’s part of what gives it this superhuman cutting ability.I know for some that $89.99 may seem a lot of money to spend on one knife, but if you ever had the opportunity to use this knife, you would understand why it warrants this price. If you are someone who does a lot of cooking, especially if that cooking involves a lot of fine-cutting, this AMSZL Damascus Santoku knife would be such a great gift to yourself. If you are someone who suffers from arthritis in your hands or any other kind of painful hand injury, this knife would be a godsend to you, making your cutting in the kitchen soooooo much easier. I can’t recommend this knife enough…I feel so very fortunate to have it as part of my kitchen arsenal!A chef knife is the powerhouse of your blade arsenal, so it’s essential that all kitchen chefs have a good one that they can rely upon. I have a Santoku knife by AMSZL that I adore, so when I saw the AMSZL 8”Japanese Chef Knife, I just knew I had to add it to my kitchen weaponry. The presentation is beautiful…I felt like I was opening a gift to myself when first checking out my new chef knife. While both my Santoku and chef knife are beautiful and made of high quality materials, there are some noticeable differences. My Santoku knife has a very hard and sharp blade, while the blade on this chef knife is somewhat softer and not as sharp, but that is by design as this is more of a chopper than a slicer. And due to the tasks set out before it, such as cutting through meat and bone, the chef knife is going to be a lot heavier…that’s just the nature of this beast.It feels really good in the hand and I can get a good grip on the handle easily. Due to the nature of how the blade and handle meet, I am also able to get a good pinch grip on this knife. Since the bolster is small and set way back, you can sharpen this pretty far back. The blade is nicely finished…you can run your finger down the back of the blade just as smooth as you please with no burrs or anything. This is a single-bevel knife and though the blade is not as sharp as my Santoku, it’s still plenty sharp and glides through vegetables no problem. This knife just seems to power through whatever I throw at it, actually, and its heft helps with that. When cutting chicken or beef, I don’t even need to put pressure on this knife for it to go through…it took no effort whatsoever to butterfly chicken. I just love the sound it makes as it slices through bell peppers…this might as well be a samurai sword!I also have to say, these AMSZL knifes look great on my knife-block. The hammered Damascus finish of the blades shimmers in the light from all directions. And the handles are curvaceous and sexy with their high polish finishes. The gorgeous rivets on this, just finishes it off with a *chef’s kiss*...beautiful! I highly recommend this gorgeous AMSZL 8” Japanese Chef Knife as a necessary tool in every serious home chef’s kitchen!
